Foo Ferments, Jazzed on Grains and Sæsonmelier have joined forces for a very special dinner:
Think comforting food inspired by traditional family recipes made with local, seasonal ingredients and paired with delicious natural wines. The menu features four intentional dishes and a dessert.
The people behind the dinner:
Foo Ferments is a queer and female-owned fermentation company using new and traditional techniques to produce tasty, nutritious and sustainable East Asian ferments. We believe that food should be kind, inclusive and accessible.
Jazzed on Grains’ mission is to make the most scrumptious and diverse pasta. We work with organic Danish farmers who grow an exciting array of old school grains. Grains with deep root systems that contribute to soil health and that absorb lots of nutrition from the soil. The grains are stone milled by small Danish mills, preserving all nutrition and benefits. The flour is sent to us straight off the mill and we produce small batches daily, made of only flour and water.
Sæsonmelier imports and distributes natural wines from the overlooked regions of Europe. We work exclusively with small, passionate winemakers from Central and Eastern Europe, who craft their wines with heart, (own) hands, and soul.
