Hi my name is Alexander Baert, born in London and grew up in France.
Raised with parents in the hotel industry I always wanted to be a chef and work for the famous French chefs.
So I decided to work in Alain Ducasse restaurant in Monaco, then from there worked for 5 years for Anne Sophie pic in différents of her restaurants.
Moved then to Denmark, as a senior sous chef of Rasmus Koefed in restaurant Geranium.
With two of my friends we decided to take over Holly to create a good place to be in Copenhagen.
