Pablo Usobiaga – Arca Tierra (CDMX) Champion of the chinampas — the ancient floating farms of Xochimilco. Pablo is the founder of Arca Tierra , reconnecting Mexico City to its food roots through regenerative farming, ecosystem restoration, and deep cultural memory. Rosa Montiel – Real Minero (Agave by Montiel) A woman-led, fourth-generation mezcal-producing family from Santa Catarina Minas.
