LATE JULY Pop-Up at Amator

After many years of friendship and many shared bottles of beautiful natural wines, Benjamin
Keswick, founder of Good Gear Produce in New Zealand, and Damian Piorkowski, founder
of D Ferments in Denmark, decided to make a little more than their regular yearly one or two
evening pop-ups.
From July 11th to 29th, 2024, Amator, curated by Mati Pichci in Østerbro, will be transformed
into a pop-up and small goods shop called LATE JULY CPH. Breakfast and lunch will be
served by Chef Benjamin Keswick from Thursday to Sunday. In addition to ‘à la carte’
options, various multi-course menus will be offered that change regularly but always include
the must-try Burnt Butter Cookie Ice Cream Sandwich with Vanilla and White Chocolate.
The eatery will also feature a small goods store and serve as a pick-up station for D
Ferments orders of non-alcoholic kombucha, kombucha cocktails, kombucha vinegars,
kimchi, and other surprise treats. The pop-up shop will also feature a selection of wines from
Rosforth, teas from Sing Tehus, and coffee from La Cabra.
Special Features:
● 12th July: STREET FOOD POP UP with HayPan, the Chilean guru of empanadas.
Benjamin will serve his carrot dish and Damian will curate a cocktail. Preorder the
combo via @dferments for 225kr or pay on the day for 250kr.
● Friday & Saturday Evenings: Guest chef events ranging from lively street food
parties to curated sit-down dinners with set menus and wine pairings. Evening events
on July 13, 20, 21, 27, and 28 to be announced.
● Sundays: “Bring Your Own Vinyls” for music and community.
● July 29th Closing Event: Featuring a trio with Mati Pichci, Benjamin Keswick, and
Damian Piorkowski.

● Heirloom tomatoes with anchovies, edamame beans, and fine herbs

● Cos heart salad with wild garlic aioli, pickled onions, and saffron elderflower dressing
● Soufflé omelette with cheese, tomato, and kimchi (Add poached mini crayfish)
● Compressed watermelon with Smoke Break (Triple layered white mezcal negroni
with black cardamom kombucha), freeze-dried feijoa, and strawberry
● Potato with chives and crème fraîche
● Burnt butter and vanilla ice cream sandwich with “notella” and freeze-dried white
