Santiago Moctezuma – Maizajo (CDMX)
The soul of Mexico City’s tortilla revolution. Enrique Olvera’s favorite tacos — Maizajo is dedicated to preserving the ancient craft of nixtamalization , sourcing heirloom corn from small-scale farmers and turning it into some of the most sought-after tortillas in the country.
Pablo Usobiaga – Arca Tierra (CDMX)
Champion of the chinampas — the ancient floating farms of Xochimilco. Pablo is the founder of Arca Tierra , reconnecting Mexico City to its food roots through regenerative farming, ecosystem restoration, and deep cultural memory.
Rosa Montiel – Real Minero (Agave by Montiel)
A woman-led, fourth-generation mezcal-producing family from Santa Catarina Minas. Graciela and her cousin Rosa are guardians of ancestral mezcal traditions , using clay pot distillation and leading agave sustainability efforts across Oaxaca — crafting some of the finest expressions in the agave spirits world.
