Rafa decided to take over his mothers profession as a teacher, but he always had a passion for food.
Shortly after getting his Bachelors degree in teaching, he taught english for a few months but decided to quit, and started working as a dishwasher.
As he worked his way up through the kitchen he became the head chef of Casa Oaxaca for many years until he was offered a head chef position at a Mexican restaurant owned by the Noma Group and a baker position at Meyers Bagerie by the Claus Meyer Group in Copenhagen, Denmark.
Since he returned to Oaxaca he has been exploring different ways of baking and is looking for wheat species endemic to Oaxaca.
