» I had a collaboration with noma last year where I was invited by the one and only René Redzepi. We were several restaurants that gathered for a charity event organized by noma. It was an adventure to see Tarik (the former sous-chef) and Mette Søborg working, they are truly dedicated. I have never been a guest at noma and have always wished to try their food. And suddenly I was in their kitchen and René was asking me the whole night "Have you tried this and this? Eat this and this" like he was reading my mind. The experience was like being in a dream and I will never forget that day. «
