Julefrokost of the Future: reimagining the Danish Christmas tradition
The Danish Julefrokost, Christmas lunch, is perhaps the most important and recognizable Danish Christmas tradition. The table is set for (some) communities to gather and share a meal. However, the current menu is made from a food system that currently contributes to 25% of greenhouse gas emissions.
Climate change will alter what our future Christmas tables may look like. How could our current eating habits shape our possibilities for future Christmas lunches? How might we eat the Christmas meal together in the future? Through a speculative menu, we will imagine and reimagine a future table, not of sacrifice in a different climate reality, but one where we explore and expand our concept of what is cultural.
The menu will reimagined Julefrokost “classics” which may fill our tables in the future. Dishes will be eaten in classic Julefrokost-style around a shared table. Expect inventive ingredients, lots of hygge, and of course schnapps!
